Ingredients
- 2 servings (52 g) Herbalife Formula 1 Vanilla Cream flavour
- 8 servings (61 g) Herbalife Beta heart®
- 125 g coconut oil
- 150 ml honey or agave syrup
- 1 teaspoon vanilla extract
- 500 g oat flakes, or a mixture of barley, wheat and rye flakes
- 100 g flaked almonds
- 100 g chopped cashew nuts
- 100 g desiccated coconut
- 100 g pumpkin seeds
- 100 g sunflower seeds
- 250g dried fruit, such as chopped dried dates, figs, apricots, raisins and sultanas
Instructions
- Preheat the oven to 170° C (150° C Fan).
- Melt the coconut oil, honey or agave syrup and the vanilla extract in a small saucepan.
- Mix the oat flakes, almonds, cashew nuts, coconut and the pumpkin and sunflower seeds in a large bowl.
- Stir in the melted coconut oil and honey (or agave) mixture and stir well until evenly incorporated.
- Spread the muesli out in a large roasting tray and bake in the oven for 25 minutes, or until the nuts and grains are a pale golden brown.
- Stir it in the oven every 5 minutes, so it browns evenly.
- Remove the tray from the oven and leave the muesli in the tray to cool, stirring frequently.
- When it has cooled down, add the dried fruit, Formula 1 Vanilla Cream flavour and Beta heart®.
- Stir and put into an airtight container to store at room temperature. Keeps well for up to a month.
Tips:
- You can add in a teaspoon or two of ground cinnamon.
- Try different combinations of nuts, seeds and dried fruit for variety.
