Ingredients
- 2 servings (12 g) Herbalife Formula 3 Personalised Protein Powder
- 2 tablespoons olive oil
- 1 large onion (roughly 150 g), finely chopped
- 1 clove of garlic, finely chopped
- 1 teaspoon ginger, finely grated
- 300 g mushrooms (can use a variety), chopped
- 200 ml low fat coconut milk
- 700 ml vegetable stock, reduced salt
- Pinch of black pepper
Instructions
- Pour the olive oil into a saucepan over a low heat, add in the onion and garlic and season with pepper.
- Cover the pot and cook gently until the onions are tender.
- Add in the chopped mushrooms and the ginger and cook, uncovered, over a medium to high heat until the mushrooms are cooked.
- Place the coconut milk in a bowl and mix in Formula 3 Personalised Protein Powder.
- Whisk in the stock.
- Pour this onto the mushrooms and bring up to boil.
- Simmer for 2 minutes.
- Blend and season to taste.
